In light of it being Cinco de Mayo here yesterday, I had a little play with some tequila and lime with great success. The tequila and lime chocolate cookies I made over Bain-Marie were delicious and went exceptionally well after a margarita or two!

  • 8 oz butter

  • 2 cups of brown sugar

  • 1 cup of white caster sugar

  • 4 oz dark chocolate

  • 2 eggs

  • 2 tsp tequila

  • 1 tsp triple sec

  • Juice of 1 lime

  • 2 cups all-purpose flour

  • 4 oz milk chocolate

  • Step 1

Cream the butter and sugar together.

  • Step 2

Melt the dark chocolate over a bain-marie.

  • Step 3

Mix the chocolate and the creamed butter together.

  • Step 4

Add the eggs and mix in.

  • Step 5

Add the tequila, triple sec and lime and mix in.

  • Step 6

Fold in the flour until you form a dough.

  • Step 7

Smash up the milk chocolate and mix into the dough.

  • Step 8

Form small ‘patties’ with the dough and place on greased baking tray.

  • Step 9

Bake at 350F for about 15 minutes or until cooked.
