Serves 12 (or 6 very hungry guests!)


  • 1 litre tub of vanilla ice cream

  • 3 100-g bars of milk chocolate

  • 1 cup mini marshmallows (or chopped marshmallows)

  • 1 cup walnuts (toasted and bashed)

  • 1 cup almonds (toasted and bashed)

  • 12 (or 6) sparklers (if parents agree!)


  • Step 1

    Leave vanilla ice cream out on the side to soften. While it is softening, you can continue with steps 2–10.

  • Step 2

    Eat a huge tablespoon of vanilla ice cream to ensure you like it!

  • Step 3

    Toast nuts. Turn the oven on to 350F and place nuts on a baking tray. Place baking tray CAREFULLY in the oven (use oven mitts!) and leave for 10 minutes. (Set a timer – it's very easy to forget!)

  • Step 4

    Place nuts in large Ziploc bag and ensure the bag is sealed.

  • Step 5

    Grab a rolling pin and bash the nuts until they are small little pieces. An extremely satisfying part of the operation!

  • Step 6

    Place one bar of milk chocolate, out of the wrapper, in a Ziploc bag and bash until you have small chocolate pieces.

  • Step 7

    Choose a pan and find a bowl that will sit on top of the pan easily and won't sink to the bottom of the pan. You will then need to: a) put water in the pan till it is ⅓ full b) place the bowl on top of the pan and ensure the water in the bottom of the pan doesn’t touch the bottom of the bowl

  • Step 8

    Once you have chosen a pan and bowl that can work together, fill the pan ⅓ full of water and bring to a boil. Meanwhile, break up the chocolate in the remaining two bars and place in the bowl. Then place the bowl CAREFULLY over the pan of boiling water to allow it to melt.

  • Step 9

    Once the chocolate has melted, turn off heat and leave for 15 minutes.

  • Step 10

    CAREFULLY take the bowl off the pan.

  • Step 11

    You are now ready to assemble! Start by tipping half the vanilla ice cream into a bowl. Pour half the melted chocolate into the ice cream. Add half the bashed nuts , chocolates and half the marshmallows, and stir (and maybe a little taste here would be good too!).

  • Step 12

    Add the remaining ice cream to the bowl, then add the remaining melted chocolate, bashed nuts, chocolates and the marshmallows, and stir. Cover the bowl and place back in freezer for at least an hour.

  • Step 13

    To serve, take ice cream out of the freezer 10 minutes before you need it. Scoop out ice cream into bowls and ensure you get the largest! If parents agree to this bit, place sparklers in ice cream. Light sparklers and serve to your adoring guests!
