Decadent luxury!


  • 1 cup ground almonds

  • 1 cup icing sugar

  • ¼ cup cocoa powder

  • 4 egg whites

  • ¼ cup cocoa powder

  • 1 cup sugar

  • ⅓ cup water

  • 1 cup dark chocolate callets

  • 1 cup cream

  • 3 tbsp unsalted butter


  • Step 1

    Process the ground almonds, cocoa powder, half the egg whites and icing sugar in a food mixer to make an almond paste.

  • Step 2

    Whip the remaining egg whites until they form soft peaks – do not over-whip (nobody likes to be over-whipped!).

  • Step 3

    Bring the sugar and water to a boil until the sugar crystals have dissolved. (Use a damp pastry brush to brush off crystals that form on the side of the pan and stop them falling into the mixture.) Once the sugar water reaches 118C, slowly add it to the still whipping egg whites. (It is important that the egg whites are not beyond soft peaks when adding the sugar water, as the mixture will be too stiff to incorporate the almond paste in.)

  • Step 4

    Allow the mixture to cool.

    Add the almond paste and fold until the mixture starts to turn glossy. At this stage, the batter should flow in thick ribbons. It is now ready for piping.

  • Step 6

    Pipe onto a baking tray. When finished, tap the tray on your worktop a couple of times, then leave to settle for half an hour (the circles will spread a little, so allow room when piping).

  • Step 7

    Bake at 160C for approximately 12 minutes. Allow the shells to cool.

  • Step 8

    Prepare the filling by heating the cream until it just starts to bubble at the edges.

  • Step 9

    Pour the cream over the chocolate until it is all incorporated.

  • Step 10

    Add the butter and mix until smooth. Leave to cool.

  • Step 11

    Spread the filling between two macaroon shells. Repeat with the rest of the shells.

  • Step 12

    Enjoy them on a lazy Sunday afternoon with a loved one!
